For the dough
1 3/4 cup shredded mozzarella cheese
3/4 cup almond flour
2 tbsp cream cheese
1 egg
2 tsp Italian Seasoning
For the Quiche
6 eggs scrambled
8 strips of bacon chopped
1/2 cup heavy cream
2 tsp Garlic Powder
Salt to taste
Pepper to taste
1/2 cup shredded cheddar cheese
Preheat oven to 350°
Heat up your cast iron
1) Fry up your bacon
2) Put mozzarella, flour, Italian Seasoning, and cream cheese in a micro safe bowl. Mix around with your hands. Micro for 30 sec, stir (I used a a fork or butter knife) then another 30 sec. Stir to combine like a dough. Let cool a bit then add 1 egg.. knead in with your hands .
3) Let dough sit while you scramble eggs , add garlic, salt, pepper, and cream.
4) roll out the dough between cooking oil sprayed parchment paper. I just rolled into a circle and after putting in the skillet , we pressed out with a spoon.
5) I used 10in cast iron, use some bacon drippings from frying and line the bottom and sides of your skillet. Lay the dough in the bottom and up the sides of the skillet and bake at 350° for 12 mins.
6) While the crust is baking chop your bacon. When crust comes out add 1/2 bacon to eggs and pour over crust. Bake for 15-20 mins , add cheddar and other 1/2 of bacon evenly over the top and put back in to melt... take out and let rest for 15 mins and cut like a pie..
